Green Chicken Curry
INGREDIENTS:
- 30ml oil45ml green curry paste
- 2 spring onions, chopped
- 500g chicken breasts, cut into strips
- 1 stalk lemongrass, finely chopped
- 250ml coconut milk
- 5ml fish sauce
- 4 basil leaves
- 20ml parsley
- 3 green chillies for garnish
METHOD:
- Heat oil in a large frying pan or wok and add the curry paste.
- Cook for 1 minute to develop the flavour.
- Add the spring onion and stir for another minute.
- Add the chicken and lemongrass.
- Stir-fry the chicken until no longer pink in colour.
- Add the coconut milk and bring to the boil.
- Simmer for 5-6 minutes.
- Remove from the heat and add the fish sauce, basil and parsley.
- Garnish with chillies.
